This is yummy served with VETTA Carb-Less Spaghetti or some wholemeal fettucini
Ingredients:
500g steak of your choice
1 onion sliced
1/2 teaspoon paprika
mushrooms chopped
2 tablespoons tomato paste
1/2cup beef stock
1/2 Light Carnation Milk (aka Skinny Tinny)
3 teaspoons cornflour
Procedure:
1. Trim any excess fat from the steak - cut into strips.
2. Cook the strips in a pan until medium rare, once cooked remove the strips.
3.Lightly spray the pan with an olive oil/canola oil cooking spray and cook the onion, paprika and mushroom over medium
heat until the onion has softened.
4. Add the meat, tomato paste, stock and 1/2 cup water. Bring to the boil, then reduce the heat and simmer for 10 minutes.
5. In a small bowl, mix the evaporated milk with the cornflour. Add to the pan and stir until the sauce boils and thickens.
Spice well with pepper and extra paprika if desired.
Serving Size:
Serves 4 comfortable.
