This is a really nice light dish and great for vegetarians!
Ingredients:
200g mixed mushrooms (think shiitake, chesnut, black trumpet)
oil
2 desert spoons lemon juice
175g Light Philly Cream Cheese
Paprika
Pepper
1/2 cup chicken stock
Procedure:
1. slice your mushrooms
2. in a large pan lightly cook your mushrooms in a little bit of oil and the lemon juice.
3. Add the Philly, pepper, paprika - stir till mushrooms are coated
4. SLOWLY pour in the chicken stock, add a bit of corn flour if this gets too thin.
5. Garnish with chopped chives.
